[BEEP] [CHOPPING] This class is called Introduction to Healthy Cooking for the Vulnerable. The Thanksgiving meal encompasses all the students in the class. We're broken up into teams, and so each team is responsible for something different. And by that time, your skill level is at an appropriate level to work independently. Of course, Chef is always (LAUGHING) supervising. [INAUDIBLE] ladle. Let's put them-- Usually, Thanksgiving, people who have problems, if it's heart disease or people who try to stay on a diet, people are really afraid of holidays. And they know that during their holiday season, usually people gain five pounds. So we're teaching students how to cook healthy. We are removing all the unhealthy components of a typical Thanksgiving menu-- all the saturated fats, the refined starches, the refined carbohydrates-- so we try to focus on first, using only nutrient dense food. Mashed cauliflower, game changer. It looks like mashed potatoes, and you can fool people who have mashed potatoes the way you prepare it, but it's a lot healthier for you, and it's delicious. Oysters in the dressing, so that's a little bit different. Give it a little bit of flavor, a little bit more salty flavor. And then you don't have to use as much salt, because you're using the salt from the oils that are in the oysters and stuff. So that's always the cool thing, how you can substitute and you don't have to use certain ingredients. We want the nurses to be able to have a chance to learn what healthy cooking is, practice it themselves, and then they can feel excited to teach other people. They are amazing students. The results are just incredible, and I'm very amazed by what the student can produce. [BACKGROUND CHATTER]
